Facts about Ceylon cinnamon

Ceylon cinnamon, or Cinnamomum verum, is a small evergreen tree grow in Sri Lanka. The inner bark of

the branches is peeled off as long "quills" of cinnamon by hand by skilled workers. These quills are then

dried over several days, in the shade, and then in darkness. Lastly, the dried bark is cut into sticks or

ground into powder.
